Cabbage is good for health and available readily in local markets at a cheaper rate. However cabbage fry is disliked by many people, especially children. Lets see a way to cook the cabbage in a tasty way – which will be liked by almost everyone.

Ingredients

  1.   Cabbage – 300 grams
  2.   Black gram – 1 tablespoon
  3.   Mustard – 1/2 tablespoon
  4.   Bengal gram – 1 tablespoon
  5.   Turmeric – 1/4 tablespoon
  6.   Salt – 1/4 tablespoon
  7.   Oil – 4 tablespoon
  8.   Curry leaves – 10
  9.   Red Chilli – 7
  10.   Onion – 2 (medium sized)
  11.   Garlic – 5
  12.   Asafetida – 2 pinch
  13.   Coconut – 50 grams
  14.   Maggi masala – 1 pack

Things to be done before we start cooking

  • Take 300 grams of cabbage – shred it into very small pieces (using a shredder) or cut it into very small pieces. Then put it in a bowl full of water – let it soak in water for 10 minutes – Drain the water and transfer cabbage pieces to a dry bowl – Thus, the smell of cabbage will be removed.
  • Peel 5 cloves of garlic and then grind them.
  • Chop 2 onions into smaller pieces.
  • Shredded coconut (coconut flakes) – 50 grams

Steps to Prepare

(1)   Place a 3-litre pan on the big burner – turn on the flame to LOW mode.

(2)   Pour oil – 4 tablespoons (Refined oil, groundnut oil or palm oil can be used). Let oil get hot.

(3)   Put the below items into hot oil –

  • Bengal gram – 1 tablespoon
  • Mustard – 1/2 tablespoon
  • Black gram – 1 tablespoon
  • Garlic – 5 cloves (grinded)

Turn the flame to HIGH mode – start stirring for 30 seconds.

(4)   Add

  • 7 red chillies – stir again for 5 seconds.
  • Chopped onions (2 onions)

Stir till onions turn a glossy look. No need to stir till they turn light brown colour.

(5)   Then let’s add –

  • Curry leaves – 10 to 15. Stir for 10 seconds.
  • Asafetida – 2 pinches.
  • Salt – 1/4 tablespoon
  • Turmeric powder – 1/4 tablespoon
  • Maggi masala – 1 (5 rupees packet) (this is optional – we can skip this step if not needed).

Stir for 10 more seconds to mix the masala well.

(6)   Now, lets add the chopped cabbage to the masala mix.

Don’t stir. Just close the pan with a lid.

Turn the flame to LOW mode. Let cabbage get cooked for 5 minutes.

After 5 minutes, remove the lid. Now, we can stir so that cabbage mixes with the masala in pan.

(7)   After stirring, again close the pan with a lid.

Let the cabbage get cooked in LOW flame for another 5 minutes.

 (8)   Now, remove the lid – then add 50 grams of shredded coconut.

Mix it well for 1 minute. Then turn off the flame.

Our cabbage fry is ready to be served as an excellent side dish.
