Sweets are favorite for all and halwa seems to take a special place among Indians. Carrot is a healthier vegetable and lets make a tastier version of carrot halwa that will be liked by all.

Ingredients

  1.     Water – 1 and 1/2 litre
  2.     Carrot – 1/2 kg
  3.     Food color – 2 pinch (prefer orange colour)
  4.     Ghee – 4 tablespoon
  5.     Cardamom – 3
  6.     Sugar – 200grm
  7.     Sweet less kova – 100 grams
  8.     Milkmaid – 3 tablespoons
  9.     Almond – few
  10.     Cashew – few

Steps to Prepare

(1)    Place a pan on the burner – turn on the flame.

Pour 1.5 litres of water. Let the water boil.

(2)    Put the shredded carrots into the boiling water. Stir a little to immerse carrots into water. This is done to remove the natural/raw smell from carrots.

(3)    Add 2 pinches of orange “food colorant” to the water. Then stir a little.

  • Close the pan with a lid.
  • Turn the flame to LOW mode.
  • Let the carrot get cooked for 10 to 15 minutes.

After 10 minutes, remove the lid, check if carrot got cooked. Just take a little of carrot, press it and we can feel it to be soft – that means it got cooked.

(4)    Pour the contents of pan over a big metal strainer – so that water drains off completely. Also, we need to press the carrot lightly so that last drop of water drains out.

If we don’t have the big strainer, we can place a cloth on a vessel, then pour the contents of the pan over the cloth, obviously the water will drain off and carrot alone will stay in that cloth.

We can take the cloth with carrot inside it – then tight the cloth with hands to remove the last drop of water from carrot.

(5)    Place another pan on the burner. Keep the flame in LOW mode. Pour ghee – 3 tablespoons. Let the ghee get hot.

(6)    Once the ghee is hot, put the dried carrot shreds. In low flame, lets fry the carrot along with ghee.

(7)    Take 3 cardamoms – break them and get the seeds that are inside and add them to the pan.

(8)    Stir it for 2 more minutes. Then, add 100 grams of sugarless kova. If this is not available – we can add the normal sweet kova also – 100 grams.

Stir continuously till kova dissolves completely with carrot.

(9)    Sugar – 200 grams or 250 grams. Stir again for some time till sugar dissolves. Let the contents be in low flame for 2 more minutes.

(10)    Turn off the flame. Pour 1 tablespoon ghee. Pour 2 tablespoon – milk maid (we can skip this step). Stir and mix well.

(11)    Cut badam into thin long slices and cut cashew nuts into small pieces.  Sprinkle these nuts all over the carrot halwa.

Our carrot halwa is ready.

Let it cool down for 2 hours – then only it will taste very good.
