Rashmi Chicken Kebab Roll

Chicken is liked by all. Lets make a delicious chapati roll with chicken stuffed inside. 

Ingredients:

  1.     Chicken – 300g (boneless)
  2.     Wheat flour – 100g
  3.     Maida – 100g
  4.     Ginger garlic paste – 1 tablespoon
  5.     Salt – 1 tea spoon
  6.     Lemon – 1/2
  7.     Cashew – 10
  8.     Poppy seeds & sesame – 1 tea spoon
  9.     salt – 1/2 tablespoon
  10.     Milk – 100ml
  11.     Green chilli -2
  12.     fresh cream – 1 tablespoon
  13.     curd – 2 tablespoon
  14.     kasuri Methi – 1 tablespoon
  15.     Garam masala – 1/4 tablespoon
  16.     coriander leaves – little bit
  17.     curry leaves – little bit
  18.     green chilli – 3
  19.     mint leaves – little bit
  20.     lemon – 1/2
  21.     cumin powder – 1 tablespoon
  22.     curd – 100ml
  23.     butter – 1 tablespoon
  24.     Egg – 1

Things to be done before we start cooking

  • Wash and clean the chicken pieces – let the water drain off.
  • Cut them into medium sized pieces.
  • Grind 100g ginger and 100g garlic together to obtain ‘ginger-garlic” paste.

Steps to Prepare

(1)    Take the chicken pieces (300g) in a bowl and add the below to it –

  • Ginger garlic paste – 1 tablespoon
  • Salt – 1 tea spoon
  • Lemon – juice of 1/2

Mix the contents well – let the chicken pieces marinate for 10 to 15 minutes.

(2)    Take the below 3 in a small bowl and pour little water to soak them for 10 minutes –

  • Cashew nuts – 10 – break them into small pieces
  • Popeye seeds – 1 tea spoon
  • Sesame – 1 tea spoon

(3)    Take the below in a bowl and start kneading the flour for 3 to 4 minutes –

  • Wheat – 100g
  • Maida – 100g
  • Salt – 1/2 tablespoon
  • Milk – 100 ml
  • Water – 6 tablespoons

(4)    After kneading the flour to a ball of dough, pour 1 tablespoon of oil and knead again for 60 seconds.

Keep the dough in the same bowl, close it with a lid. Keep the bowl aside for 30 to 45 minutes.

(5)    Put

  • the cashew, Popeye seeds and sesame (soaking in water) into a mixer jar.
  • green chilli – 2.
  • Grind them together in a mixy jar to a fine paste.

(6)    Put the fine paste prepared in step 5 into chicken bowl. Also add the below –

  • Fresh cream – 1 tablespoon
  • Curd – 2 tablespoons
  • Kasturi methi – 1 tablespoon
  • Garam Masala – 1/4 tablespoon

Mix the chicken and contents well with our hand itself.

(7)       Green Chutney           (prepared in step 7 and 8)

Take the below in a mixer jar and grind them well to a fine paste –

  • Coriander leaf – 1 handful
  • Mint leaves – 1/2 handful
  • Curry leaves – 20
  • Green chilli – 2
  • Lemon – juice from half

Transfer the grinded paste to a bowl – add the below –

  • Salt – ½ tea spoon
  • cumin powder – 1 tea spoon
  • curd – 100 ml

Stir well together with a spoon – our green chutney is ready.

(9)    Place a pan on the burner. Turn on the flame. Put the below in it –

  • Butter – 1 tablespoon. Let the butter melt and spread over the face of pan.

(10)    Once butter melts completely, turn on the flame to LOW mode. Let’s put the chicken pieces into the pan.

(11)    Take one egg in a bowl and beat it. Once the chicken pieces are in the pan for 2 minutes, lets apply a coating of egg on all the pieces using a basting brush.

(12)    After 20 seconds of applying egg, start flipping the pieces one by one. Let the pieces fry for 2 to 3 minutes.

(13)    Cut the fried chicken pieces to smaller pieces.

(14)    Again, place the pan on flame – put 1 tablespoon butter and let it melt.

(15)    Once butter melts, put

  • Onion – 2 medium sized – chopped to long slices – Toss the onion in butter for 1 minute.
  • Cabbage – 75 grams – chopped to thin long slices – Stir a little – for 45 to 60 seconds.
  • Put salt – 1/4 tea spoon
  • Powder pepper – 1/4 tea spoon – Stir well.
  • Add the chicken pieces (cut into smaller pieces)

 

  • Stir well the contents in pan. 
  • Turn off the flame.
  • Garnish with coriander leaves – a few

(16)  Making Rumali Roti  

  • Start rolling the dough to lemon size balls.          
  • Press the balls and make them to a thin circular roti.
  • Heat a tawa – fry the roti on it for 40 seconds.

(17) 

  • Take one Rumali roti, then do the following –
  • Apply a layer of green chutney on one side of roti.
  • Then keep a little of chicken, cabbage and onion stuff on it.
  • Roll it.
